Today for the Monday Mange, Al and Stacey from The Frosted Apron are serving up brunch! They made Pancake Muffins with Maple & Brown Sugar Buttercream Icing drizzled with Jalapeno infused Maple Syrup then topped with either crispy Bacon or Chicken & Waffles.

Pancake Muffins:
2 cups Bisquick
1 cup milk
2 tablespoons vegetable oil
3 eggs
Maple and Brown Sugar Buttercream Icing:
2 sticks unsalted butter
6 cups powdered sugar
4 tablespoons brown sugar
4 tablespoons milk
5 tablespoons maple syrup
1 tsp salt
Jalapeno infused Maple Syrup:
2 cups maple syrup
1 whole fresh jalapeno
Toppings:
Cooked crumbled bacon
Toasted waffles (cut in four pieces)
Cooked Crispy Boneless Chicken Nuggets
Preheat oven to 350 degrees. Mix the first 4 ingredients to make the pancake muffin batter. Grease inserts of a muffin pan. Fill each insert a little more than half way with batter. Bake for about 15 minutes. Let cool.
To make the icing, mix the 6 ingredients together. Make sure all the ingredients are blended well. Add more milk to get a creamier consistency if needed.
In a small pot, add 2 cups of maple syrup, and 1 whole fresh jalapeno that has been cut in half and deseeded to make the jalapeno infused maple syrup. Cook on the stovetop for about 10 minutes on low heat. Stir often. Remove jalapeno before serving.
For the toppings, cook and crumble slices of bacon. Set aside. For the chicken and waffles muffin, toast a few frozen waffles in the toaster or oven. Follow the toasting instructions on the back of the box. Purchase cooked, crispy, boneless chicken nuggets from your favorite restaurant or use your favorite recipe to make your own.
After the muffins are cooled, cut the top part of the muffin off creating a flat surface. This is optional. Using cake decorating tip 1M, pipe on the icing. You can also frost the muffins with a spatula. To make the bacon muffins, drizzle the jalapeno infused maple syrup on top the icing, then top with cooked crumbled bacon. The make the chicken and waffles muffins, top with a 1/4 piece of toasted waffle, a piece of cooked, crispy, boneless chicken, then drizzle the hot syrup on top. These muffins are a fun brunch idea! Enjoy!
